Thai Salad with Garlic Dressing

Ingredients that you will need:
For the dressing:

  • 3 cloves garlic
  • 3 tablespoons soy sauce
  • 2 tablespoons water
  • 2 tablespoons vinegar
  • 2 tablespoons honey
  • 1 tablespoon sesame oil

For the salad:

  • 16 ounces edamame beans
  • baby kale
  • 3 carrots
  • 2 bell peppers
  • 1 cup cilantro leaves
  • 3 green onions
  • ¾ cup cashews nuts

For this healthy and low fat salad first prepare the dressing.Put all the dressing ingredients into a blender and blend until smooth.Now boil the edamame beans for about 5 minutes,then let it cool.Cut the kale,cilantro leaves,green onion,carrots and peppers.Next put the cooked edamame in the blender and blend until is smooth,then crush in the bleed the cashews nuts.And now combine the vegetables with the edamame puree and cashews .Top with the dressing and the salad is ready.Enjoy!
