Blackberry & Meyer Lemon Pavlovas
- 6 large egg whites
- 1 1/2 cups sugar
- 1 tablespoon of cornstarch
- 1 teaspoon of white vinegar
- 1 pinch of salt
Blackberry-Meyer lemon topping ingredients:
- 12 ounces of blackberries
- heavy whipping cream
- 1 teaspoon of vanilla extract
- 2 tablespoons of sugar
- 2 tablespoons of water
- 1 Meyer lemon
For this recipe first we beat the egg whites with a mixer,until they are foamy and froth.We add salt and vinegar,and mix again,add sugar slowly and mix until the sugar is dissolved.After that add the cornstarch and mix again until all is incorporated.
Now preheat the oven ,line a baking sheet with parchment paper,and spoon the meringues onto the baking sheet.Bake for about 1 hour.After they are done,prepare the blackberry sauce.Put 1/3 blackberries,2 tablespoons sugar,2 tables spoon of water in a small pot and boil and simmer for about 5 minutes.Now put the syrup into a food processor and blender until is smooth.Prepare the whip cream,mix the heavy cream with lemon juice and vanilla extract until they are foamy.
The last step is to remove the meringues from the parchment paper,spoon whipped cream over the meringue,drizzle blackberry sauce and top with fresh blackberries.Enjoy!
