Egg and Veggie Pittas


Ingredients that you will need:

  • 1 eggplant
  • 1½ tbsp olive oil
  • 1 tbsp harissa( hot Chili pepper paste)
  • 2 eggs
  • 1 tbsp red wine vinegar
  • 1 raw beetroot
  • 1 large carrot
  • ½ small red onion
  • 4 tbsp 0% fat yogurt
  • 1 garlic clove
  • 2 wholemeal pitta breads
  • salt
  • pepper

First preheat the oven,then cut the eggplants,season,spread olive oil and bake for 15 min.After the 15 min,spread harissa on them and bake for another 5 minutes.Boil the eggs then sliced them.Now slice the carrot,onion and beetroot and combine them with vinegar.And now mix the yogurt,garlic,salt,pepper.The last step is to toast the pitas and cut them in half,and put inside the eggplants,vegetables salad,sliced eggs and top with the mixed yogurt.Enjoy!
