Vegetable Tagine With Chickpeas and Raisins


Ingredients that you will need:

  • 2 tbsp olive oil
  • 2 onions
  • ½ tsp each ground cinnamon,coriander
  • 2 courgettes
  • 2 tomatoes
  • 400 g can chickpeas
  • 4 tbsp raisins
  • 425 ml vegetable stock
  • 300 g frozen peas

This recipe is vegetarian and very easy to do,first fry the onion until is soft,then add the cinnamon and coriander,stir 1 minute.Now add the courgettes,chickpeas,raising,tomatoes,vegetable stock and boil for about 10/15 minutes.The next step is to add the peas and boil for another 5 minutes.Enjoy!
