Mushroom and Thyme risotto


Ingredients that you will need:

  • 1 tbsp olive oil
  • 350g chestnut mushrooms
  • 100 g quinoa
  • 1 l hot vegetable stock
  • 175g risotto rice
  • thyme leaves
  • grated parmesan
  • rocket leaves

So first cook the mushrooms for a few minutes,then add the quinoa.Now pour half of the stock and stir in half of the rice,repeat with the author of until the rice and quinoa are cooked.Now top with parmesan,thyme and rocket leaves.Enjoy!
