Moroccan turkey salad

Ingredients that you will need:

  • 2 pitta breads
  • 2 tbsp olive oil
  • 1 diced aubergine
  • 1 tbsp harissa
  • 250g halved cherry tomatoes
  • 500g shredded leftover turkey breast
  • 100g rocket
  • seeds 1 pomegranate
  • a few mint leaves

First we split the pitta into pieces and fry in olive oil until it’s crisp.Then we fry the aubergine for about 10 minutes,add the pitta,the harissa,tomatoes,turkey and rocket.After we scatter pomegranate seeds and add mint leaves.Enjoy!
