Moroccan chickpea soup


Ingredients that you will need:

  • 1 tbsp olive oil
  • 1 medium onion
  • 2 celery sticks
  • 2 tsp ground cumin
  • 600ml hot vegetable stock
  • 400g can chopped plum tomatoes with garlic
  • 400g can chickpeas
  • 100g frozen broad beans
  • zest and juice ½ lemon

First we fry the onion for about 10 minutes.Then add the stock,tomatoes,chickpeas,and black pepper and simmer for about 10 minutes.Now put broad beans and lemon juice,and let it cook for another 3 minutes.Now we season,and top with lemon zest.Enjoy!
