Roasted Eggplant Dip with Greek Yogurt
Ingredients that you will need:
- 3 medium eggplants
- 1 small garlic clove
- Coarse salt and freshly ground pepper
- 1/2 cup plus 2 tablespoons extra-virgin olive oil
- 1/2 cup plain full-fat Greek yogurt
- 1/4 cup fresh lemon juice
First we cook the eggplants,until they are soft,for about 15 minutes.Then we let it cool and we peel them,after we finely chop them.Then we mince the garlic.Then we mix the garlic,the eggplants and the salt,we stir the oil.After we add in the mix the yogurt and lemon juice and season with salt and pepper.Enjoy!
