Brown Butter Spaghetti with Roasted Butter Squash

Ingredients that you will need:

  • 300 grams spaghetti
  • 2 cups butternut
  • 2 Tbsp olive oil
  • 1/4 cup unsalted butter
  • 3 cloves of garlic
  • 2 onions
  • 1/4 cup pecorino romano
  • 1/4 cup parmesan
  • salt
  • pepper
  • parmesan
  • sliced chives, for serving

So first off all lets start by boiling the water with a little salt,and boil the pasta.Then we spread out butternut squash,after we drizzle with 2 tablespoons of olive oil ,season with salt and pepper. We bake for 30-40 minutes until squash is soft..Then we took a large nonstick skillet, and melt butter on a medium heat,after we add garlic and onions. Cook for about 4 minutes. After that we add pecorino romano, parmesan cheese, and roasted butternut squash. Season with salt and pepper to taste.Enjoy!
