Spinach, Feta and Potato Gratin
Ingredients that you will need:
- 800g potatoes, peeled and sliced
- 150ml chicken stock
- 2 cloves garlic, peeled and flattened with a knife
- 250ml semi-skimmed milk
- 2tsp butter
- 300g ricotta cheese
- 100g The Co-operative feta cheese, crumbled
- 200g fresh spinach
- 1 small bunch of mint or oregano
Preheat the oven to 180C/Gas 6.We combine the chicken stock, the garlic and milk in a saucepan. Bring to the boil.Next we have to grease an ovenproof dish with half the butter,then we add a layer of potato, overlapping the slices,after the potato we add little ricotts and feta, spinach and herb, and gblack pepper. Repeat, ending with a layer of potato, dotted with ricotta, feta .After we prepar this emove the garlic from the stock and pour over the gratin. You have to bake, covered for 30 minutes,then uncover and cook for another 40 minutes until most of the liquid has been absorbed .
