Penne with artichokes

Ingredients that you will need:

  • 1 lb. penne rigate
  • 1 small onion
  • 2 garlic cloves
  • 1/4 cup extra virgin olive oil
  • 8 artichoke hearts, quartered
  • 1 1/4 cups canned diced tomatoes
  • 1/2 cup grated Parmesan cheese
  • Salt
  • Pepper

It’s a real simple and delicious recipe.We start sauté the onion and the garlic in the olive oil then we add the artichoke hearts. Cook to a pale gold color, then add the tomatoes, seasoning to taste. Simmer 10/15 minutes .Cook the penne rigate until al dente in salted water. After they are ready we rain and add to the artichoke sauce. The last we grated Parmesan.Enjoy!
